Salsa Again
Made a full batch (6 quart jars and 3 pint) of zesty salsa with the ripened tomatoes.

Pretty much a full drawer for 5.33 jars. Perfecto.
Salsa day
We made tomatillo and zesty salsa today.
Canning day
This was ~6 wide mouth pint jars. It roughly filled a strainer before being trimmed down.
One of the jars of runner beans got double salt (whoops). It has some small yellow pieces on top to mark it.
Tomatillo salsa time
Tomatillo salsa day. I froze two big ziplocs of tomatillos (in skin) and that made about a double batch of salsa.

Canning and salsa
We had a good haul of green beans, so today we canned them. (This picture was a little too much for the full load. I’ll cook the rest tonight).
And now we’re roasting tomatillos, onions, and jalapenos for salsa (fresh and frozen). Apparently I’ve been letting the tomatillos get overripe (yellow) so we did a mix.

I think I missed a day
Green Beans out our ears. I finally pulled the last of the start onions and garlic, braids coming soon. Still got some berries- and more tomatoes and tomatillos. And carrots and beets
I’m loving the carrot top “pestos” with onions, garlic, whatever green herb (basil, cilantro, oregano) and an acid (red wine vinegar, citrus). P put it on pizzas tonight.

Did a bunch of cooking. Raspberry coulis, sauted garbanzo peas zucchini and greens, carrot tops (boiling water 3 minutes) garlic garbanzo cilantro lemon juice hummus, roasted carrots patty pan beets onions, fresh bread… yum.
